The Gin distillate is aged for a period of 12 months with the lees included in the barrel, which are gentled stirred on occasion to develop the unique flavour and complexity. Older oak has been selected to impart a softer flavour, which ensures the gin is enhanced by the oak notes although never dominates the flavour profile.

Sur Lie has a creamy mouth feel with subtle native Australian Wattle Seed and Oak touches, and the Chardonnay Lees create an exceptionally smooth and rounded gin with extra texture and palate weight similar to that of a Chardonnay wine.

Best served as a dry Martini (5 x parts Gin, 1 x part Dry White Vermouth) and small sprig of rosemary.
