This is an 8-year-old whisky. At first, new make spirits mature for 6 years in three different types of red wine casks. Mourvedre – a red wine grape that has a reputation for producing intense red fruit, and strong, earthy, even gamey flavours. Sauternes – casks from the Graves section in Bordeaux that previously held some of the most revered and exclusive dessert wines the world has ever seen. And finally Austrian sweet wines, full-bodied with an ability to challenge convention with innovative techniques. After the initial maturation, whiskies are vatted together and ACEd (Additional Cask Enhancement) for an additional two years in fresh Amarone – a typically rich Italian dry red wine made from the partially dried grapes of the Corvina Rondinella – casks before being bottled.
